Revisiting Some Favorites

Sunday night we had black bean fajitas again. I love this dish! I had the leftovers for lunch Monday, with a side of guacamole topped with the pico de gallo I made Sunday.


Last night Lindsey tried her hand at a veggie pizza in the style of Minky's. It was good, but we both had some ideas for improving the crust. We used a 100% whole wheat flour to make the crust, which probably needed something to sweeten it (either honey or agave nectar) and maybe some white flour. The wheat flour did not seem to rise as well as white flour and seemed a little bland (at least according to Lindsey - I thought it was great).
